1、講究個人衛生。著裝整潔、無汙損，並使自己的頭部、手等部位保持清潔。為顧客提供服務時，做到舉止得體、自然。
2、熟悉菜餚酒水。當顧客對菜餚、酒水不甚瞭解時，應及時給與詳細的解釋，並適當地給出合理的點餐建議，不可一問三不知、答非所問。
3、尊重客人選擇。顧客點餐時，不反覆推薦客人不點的菜餚、酒水等。尊重顧客的宗教、民族習慣，對於第一次來就餐的顧客，主動詢問是否有忌口或其他的用餐習慣。
4、服務熱情細緻。在接到客人訂餐時，認真記錄來客人數和用餐時間，並問清是否需要吸菸區或視野良好的座位;當客人進入餐館，熱情、主動地將客人帶到座位;在為顧客提供服務時，遵循先女賓後男賓、先客人後主人、先長輩後晚輩、先兒童後成人的原則;客人離去時，提醒顧客不要遺忘所帶物品，並表示感謝，歡迎再次光臨。
上菜注意事項如下：
①往配餐間或廚房叫菜，不可爭先恐後，按順序接受領菜;
②離廚房之前，檢察托盤的清潔，依服務順序放置托盤上，並注意菜品的美觀和溫度
③上菜時不可貪便宜，除了乾的菜餚勉強用手拿送，帶湯汁的菜宜用托盤，端的太多既難看又可能發生意外：
④領菜回到餐廳先放置工作臺，到餐桌招呼一聲，順便收除髒的茶杯及菸灰缸，以騰出放置菜餚的空間。
⑤如是吃飯的菜。隨即盛飯送上;若為下酒的菜，服侍飲料倒啤酒或汽水，應慢慢斟入杯中，但不宜倒的滿，溢位杯外;
⑥上菜時要輕巧，不要弄出聲來，端送盤、碟、碗時，要以四雙支手指支撐底部，姆指輕按緣邊，不可觸及食物。
⑦上菜的方向，從客人的左方端上，但飲料恰愉相反，要用右手從右方奉上：有時視餐桌的位置，可便宜行事;至於上菜先後順序，最好是預先得知誰是主人，以便按賓主先後之序進行。
⑧熱燙的中菜上桌時，應提醒客人的注意，因為有些用油燉的菜雖然沸，但沒有冒熱氣，不知情的客人往往一口氣嚥下，容易受傷;
⑨外籍客人用中餐時，除筷子外，並準備刀叉，視其習慣與需要提供應用;
⑩外籍客人吃中菜時，徵求他們抽意後才給予分菜，分菜時不要羹液溢位，尤其是湯汁落在桌上，弄汙餐桌，給予客人不良印象;
注意：服侍中注意水或酒、菜及飯的加添時機，避免客人等候;隨時更換菸灰缸、毛巾、湯碗、骨盤於無形之中，如換菸灰缸送上清潔的即撤除有菸蒂的。
